Green's Dictionary of Slang traces "drop" as a word for a drink back to 1751 in Scotland, reaching Australian print by 1845 — with the exact phrase "a good drop" turning up in Australian use by 1992. It sits in the same everyday drinking-slang family as plonk and grog, and "good" simply does the work of the compliment.
You'll hear it most at a barbecue or over dinner, usually said while topping someone's glass up: "grab a glass, this is a good drop."
